The key to all protective carotenoid activity is now known to
depend upon combinations of natural carotenoids, in particular
combinations including lycopene. Lycopene is an unsaturated
carotenoid pigment which imparts the red colour in fruits and
vegetables and is similar in composition to beta carotene.
Lycopene is more readily absorbed from the intestinal tract
formed as a micelle in the presence of mono unsaturated oils
such as olive oil as found traditionally in the Mediterranean
diet.
